Thanksgiving & A Twilight Filled Weekend!…

Hi there!  Happy Monday to you!  I hope all of you had a wonderful Thanksgiving a great weekend!  I apologize for not posting.  I just wanted to take the holiday and the weekend and relax.  I really needed time to just relax and hang out.  I’m glad I took some time off to unplug from the computer.  Sometimes it gets to be a bit much especially since I sit in front of a computer all day at work.  You just need that break sometimes.

How was your Thanksgiving and weekend?!  I’ll go back to Wednesday and recap from there.  Wednesday, they let us out of work early so I left around 2:15 or so.  Once I got home, I waited for Mike to get home from work and then we went out and ran some errands.  When we got home, we ate a quick dinner and picked up Melissa.  The three of us went to the movies and saw the Silver Linings Playbook.  I thought the movie was just okay.  The acting was really good in it and I liked the fact that it was filmed in Philly and that they talked about the Eagles.  I thought it was just okay though.  I’m glad I saw it though.  I haven’t been to the movies in a long time!

On Thursday, I spent the entire day cooking!  I love cooking for Thanksgiving.  It’s one holiday that I absolutely love every single aspect of and cooking on that day truly makes me happy!  I decorated the dining room.

The turkey turned out wonderfully!  I used the same recipe that I used for Thanksgiving last year.  It is a Sandra Lee recipe and I swear by it now.  It makes a juicy turkey!

I was very inspired this year by watching the Rachael Ray show and I decided to try out a lot of her Thanksgiving recipes.  I am proud to say that I loved them all and they turned out great!  I made her Apple and Onion Stuffing .

I made her recipe for Mashed Potatoes which I completely forgot to take a picture of!  They were fantastic though and I would definitely use this recipe again.  I also made cranberry sauce from scratch!  I’ve never done that before and it was so easy.

I made Whipped Sweet Potato Casserole that I make every year!  I love these sweet potatoes and they are Mike’s favorite!

Mike and I made a wonderful Apple & Butternut Squash soup in the Ninja Cooking System that I received.  This soup was a huge hit!  We are counting down the days until we make this soup again.  It was that good!

I also roasted a ton of vegetables.  I would have to say that the meal turned out great!  Mike, Melissa and my mom really enjoyed it and that made me so happy!

For dessert, we had pumpkin pie which I forgot to take a picture of.  Melissa and my mom brought soft serve pumpkin ice cream that we love from a local creamery! It was so good!!!!  I made a berry crumble which didn’t turn out good and we had cherry pie.

Overall, my Thanksgiving was absolutely wonderful.  I am so thankful for my family and friends.  They truly mean the world to me.

The next day, Black Friday, I woke up bright and early and went over to pick up Melissa and my mom!  We went shopping at several stores and I was able to pick up a birthday gift for Mike while I was there.  So I accomplished some of what I wanted to buy.  I was looking for a dress to wear to my holiday party and I didn’t end up finding anything.  So I need to look for that still.  We had a lot of fun though!  I went back to a few other stores with Mike later on in the day and then we came home and relaxed.

We started watching the Twilight series movies the rest of the weekend.  We are now up to Breaking Dawn, Part 1!  I’m excited because after we watch that one, then we can go to the movies and see the last one.  I’m really loving them so much!  I don’t know why it took me so long to get into them.  I think I am turning into a Robert Pattinson fan!  Hah!  I can’t wait to see the Breaking Dawn movies.  Do you like Twilight?

We ate leftovers for the majority of the weekend but took a break on Saturday and went to Fridays cause I had a 20% off coupon.  We started off with Spinach Dip which I haven’t had in a year.

Delicious!  I had a great weekend of relaxing and eating things that I felt like eating but haven’t been able to because of my stomach.  Did I pay for it with my stomach hurting me?  Yes, but I wanted those foods.  I have more testing that will be done for my stomach towards the end of the week.  Then I have to wait ten days for the results.  I’m hoping after that I will finally have a plan.
