Sweet Potato Linguini

Have you ever tried sweet potato ravioli? This is a lazy Mom’s gluten-free and vegan version of this classical dish. Rice linguini by Notta Pasta is always a hit at our house. Sweet potato (or two) is usually around for the holiday season and olive oil is not hard to find, so this dish can easily be put together at the last minute.

This dish is a serious kid-pleaser, because of its’ gently sweet flavor and because of the sauce’s texture, which is slightly on the mushy side. If you sprinkle a lot of parmesan on top, even the kid who hates veggies will eat it. For adults, the flavor is very similar to sweet potato or pumpkin ravioli, so if this is your thing, go ahead and try this easy pasta: it will only take 15 minutes of your time.
