Sweet Potato, Banana,Peanut Butter Oatmeal Breakfast Bread

If you want to try something other than oatmeal in the morning tomorrow morning, this vegan and gluten-free breakfast bread is very easy to make. It contains nutritious ingredients, sich as protein and fiber-rich nut butter, bananas full of potassium and sweet potato, which is rich in Vitamins A, C and magnesium as well as potassium. This breakfast bread is moist, chewy and sweet: kids’ favorite! It’s easy to eat as a snack or to pack in a lunchbox, too.

Sweet Potato, Banana,Peanut Butter Oatmeal Breakfast Bread

Serves 6-8

Ingredients:

1 cup rolled oats

4 medium ripe mashed bananas

1 cup creamy peanut butter or almond butter

1 large sweet potato, peeled and mashed

2 tsp. flax seed powder

1 tsp. vanilla extract

 

Directions:

 

Mix all ingredients together.

Pour the mixture into a lightly greased 8 x 8 baking pan. Bake at 350 degrees for 15 minutes. Cool and cut into squares.
