Things You Need:
Heat oil in a large soup pot over medium heatAdd onions and cook until softened about 6-7 minutes
Stir in Quinoa, sweet potato and vegetable stock
Turn the heat up high until boiling
Reduce heat to medium and simmer for 15 minutes until quinoa and sweet potato are cooked
Puree mixture with a blender. If you are using a regular blender mix in small batches. If you are using a large or Emerson blender you can mix the whole batch at once.
Place blended soup back into pot and turn heat on low, add coconut milk and chili powder.
Serve with yogurt or sour cream if desired.
