Sweet Potato and Quinoa Coconut Soup

This is a simple sweet potato soup. Nothing too fancy but hits all the right spots, sweet, smooth with a hint of heat and spice. Oh and the best part is the quinoa! Quinoa is a nutritious seed that taste very much like a grain. Because this seed is actually a complete protein like meat, except with out the bad animal fats to go against its benefits and is great for body tissue repair. Also its rich calcium is great for your bones and skin of course! My daughter is now 11 months and really thinks I'm eating a huge bowl of her food and going crazy because she wants some wondering why I won't let her try, hahaha,  unfortunately I put so much chili powder in my personal batch it would burn her mouth off, I don't put the amount I use on the recipe directions, don't worry.  I would suggest to use 2 medium sized sweet potatoes for the amount of vegetable broth there is so the soup doesn't turn out too thick, but gage yourself and add more or less for your desired consistency.  I found this recipe on foodandwhine.com and actually didn't change much but added a little more oil.




Things You Need:
2 Tbsp of Olive oil1/2 cup of diced onions2 medium sweet potatoes1/2 cup of quinoa3 cups of vegetable or chicken stock1 cup coconut milk1/2 tsp chili powder
Heat oil in a large soup pot over medium heatAdd onions and cook until softened about 6-7 minutes
Stir in Quinoa, sweet potato and vegetable stock
Turn the heat up high until boiling
Reduce heat to medium and simmer for 15 minutes until quinoa and sweet potato are cooked
Puree mixture with a blender. If you are using a regular blender mix in small batches. If you are using a large or Emerson blender you can mix the whole batch at once.
Place blended  soup back into pot and turn heat on low, add coconut milk and chili powder.
Serve with yogurt or sour cream if desired.
