Sweet potato “pizza” is a healthy alternative to the popular dish. It is easy to make, grain-free, not processed and considering the fact that sweet potato is loaded with carotene, vitamins C and B6, manganese,iron, calcium, fiber and potassium, it makes for a nice healthy family meal. Fresh tomatoes are used instead of tomato sauce and the cheese can be vegan, if this is what you want.
Just like with any pizza, you can add your toppings. Put them over the tomato mixture right before the “pizza” goes in the oven. You can cut your cooking time tremendously by pre-baking the sweet potato halves ahead of time.
