Supper ala Rustica

Sorry for another lengthy period where I didn't post anything. Another issue just popped up in my health that is totally ruining my life. Well not really, but, a good portion of it. I have to quit my job for two reasons: one being the lack of fairness and two being the lack of the ability to walk. Yes, you heard me. It isn't, "OMG I CAN'T MOVE" sorta ordeal, but, I'm in a lot of pain when I walk long distances and am on my feet constantly. I went to the doctor the other day and found out that my knees are caving in due to the lack of support in my feet. My knees have to rebalance themselves by therapy and wearing a brace. So, there goes my 100% on the go type of job and attitude. I can't play DDR anymore, I can't go running anymore, I can't do any strenuous physical labor that will put pressure on my knees. I don't know if I trust the YMCA enough for cleanliness and such since it isn't in a great part of town and I'm really squeamish about pool cleanliness. I think I might just end up going back into yoga but still going to miss all that cardio. I just have to figure out different means. I have to find a desk job now - oh wonderful. The only bright side would be pay if it is at all possible to be paid more than 8 an hour which is what I'm currently being paid.


I'm going to see my father in a few weeks down in Florida with my husband. For some reason, in my head, I have Florida being my saving grace. What's going to make that different than here? I still will have the same eating issues. I'll still have the same walking issues too and finding a job and paying for a house. It's just hard having things ripped from you time and time again.



But, at least I know I can still cook and no one can take that ability away.



Eggplant & Lentils in Rustic Spinach Pesto


1/2 small eggplant, roasted until tender

1 cup defrosted chopped spinach

3 sundried tomatoes, chopped

1/2 cup cooked lentils

1/2 small onion, sliced thin

Oregano

Garlic

Basil

Salt

Pepper

1 tbsp lemon juice

1/2 tbsp nondairy margarine


In a nonstick frying pan, saute the onions until soft and lightly brown. Combine the spinach, eggplant, lentils, and spices in the pan. Stir until well combined.


Take off the heat and toss with butter and lemon juice. Spoon into a bowl with a mound of wholesome brown rice..mm! It was awesome and easy.
