Actually, I kind of slightly despise it when people call Rice Krispy Treats 'cereal treats', but Honey has informed me that if you don't use actual Rice Krispy Treats they aren't technically Rice Krispy Treats. Ok, he's right and yes, I refuse to pay $3.50 for a box of Rice Krispys if I can buy Krispy Rice for $1.25. I'm just like that....
So these are my cereal treats all suped up to be way more unhealthy and so completely not on my diet. My amazing trainer says I should be losing five pounds this week. With a workout like todays, minus the suped up dessert, it's only a matter of time. I just hope he isn't seeing this post. Oops. Sorry Anthony :)
These were really good though. And I made them twice as big. And they have almonds in them so it's kind of like they're healthy... only they're not. But they're good so whatev.
4 Tablespoons Earth Balance
6 cups vegan marshmallows (the square ones... is there more than one kid of vegan marshmallow?)
5 or 6 cups Rice Krispies or Krispy Rice... however you choose to spend your moolah
1 1/2 cups almonds, lightly crushed and toasted
1 cup semi sweet chocolate chips (use the non dairy chips please)
Prepare a square baking pan by Earth Balancing the bottom and sides. You can use a larger 9x12 ish pan to make them thinner OR you can double the recipe and make the larger size in the larger pan...
In a pot on the stove, melt your Earth Balance over low heat. Once completely melted, add the marshmallows and stir constantly until melted and combined.
While your mix is a mixin', preheat the oven to about 350 and toast your almonds for about 6 to 8 minutes. Keep an eye on them so they don't burn.
Put your rice cereal in a large bowl then add the melted Earth Balance/marshmallow combination and stir really well to incorporate.
From there, add your toasted almonds and chocolate chips. Continue to mix well. Once fully mixed, pour into your prepared pan. Smooth out then put a piece of wax paper on top.
Press down on the wax paper with all your might, molding your concoction into the sides and corner of the pan, making sure it's super pressed in and even everywhere.
Let cool... once cool, cut and enjoy.
This is really good with ice cream, although I totally don't have a picture of that. On their own they are amazing too though. They have a ton of fun textures and rich flavors from the chocolate to the almonds all the way down to the krispy rice... no one can resist these; I don't care how old you are.
