Strawberry Fruit Leather Roll-Ups

I purchased my first strawberries of the season at Trader Joe’s this week.

Beautiful.

Plump.

Red.

Delicious.

Strawberry Fruit Leather Roll-Ups
Adapted from Tasty Kitchen

~ 2 cups strawberries, chopped into small pieces
¼ cups water
1 Tablespoon lemon juice
¼ cups sugar (optional, depending on the sweetness of your fruit)
1 Tablespoon canola oil

Directions:
1. Place the fruit in a medium saucepan with the water and lemon juice. Simmer on medium heat, mostly covered, until they are very soft and mushy. Stewing the fruit helps it retain its color.


2.Transfer the fruit pulp mixture to a food processor or blender and blend until smooth.


3. Taste the fruit at this point, and add the sugar if it is not sweet enough. Keep in mind that as the fruit leather dries, it will concentrate the natural sugars in the fruit and become sweeter on its own.

Oven preparation 1. Preheat oven to 170 degrees and cover a baking sheet with plastic or a silicon baking pad.
2. Spray or brush your baking sheet with the vegetable oil, then spread the fruit puree onto the sheet tray with an offset spatula or knife to 1/8-1/4 inch thickness. Place it in the oven for 6-8 hours.
3. Cool the sheet tray and cut the fruit leather into desired sizes. Dust with corn starch to prevent sticking, cover in plastic and store in a cool place in a sealed container.
Dehydrator preparation 1. Pour strawberry mixture on plastic trays made for dehydrated fruit leather – my mixture covered 2 trays.


2. Put dehydrator on 135 degrees and let run for 6-8 hours.
3. Cool the sheet tray and cut the fruit leather into desired sizes. Dust with corn starch to prevent sticking, cover in plastic and store in a cool place in a sealed container.

Nutrition Notes: If there is only one fruit that you should buy organic — it’s strawberries. They are one of the top contenders for the “dirty dozen”, a list of the highest fruit and veggie pesticide residue and you certainly don’t want to be at the top of that list. About 90% of strawberries tested had some pesticide residue on them. Beside that, organic strawberries have a sweeter taste, higher antioxidant levels and a longer shelf life! Booya!

Taste Test: These fruit roll-ups take me back to my childhood. Who doesn’t love a fruit roll-up? These homemade ones don’t even compare to the boxed ones – they are so delicious and I love the little strawberry seeds throughout. Feel free to sub any fruit — but I personally love strawberry the best!
