Stir-Fried Beef With Broccoli ( Pak Pad Gup Nua )- Thai style

500g broccoli ( preferably Asian ), cut diagonally into 2.5 cm pieces 250 g lean beef or meat, sliced into thin strips 1 tablespoon oyster sauce 1 tablespoon fish sauce 1 teaspoon sugar 3 flakes of garlic, chopped fine 3 tablespoon oil
Heat oil in a wok over medium heat and stir-fry garlic till golden . Add beef or mutton and stir- fry for several minutes, lower the heat and stir in oyster sauce, fish sauce and sugar. Cook until sugar dissolves, then add broccoli. Stir, cover and cook till done if necessary, add a little water or stock. Substitute broccoli with spinach leaves or green beans.
