Spinach and strawberry salad can be called “folic acid salad.” It is rich in Vitamin C, iron, calcium, magnesium and well, folic acid, so pregnant ladies should definitely take note.
We are in Florida, where juicy red strawberries are in season, and kids can’t have enough of them. I put the strawberries in a smoothie, in a cupcake and finally, in this easy salad. The salad is a light and crispy blend of sweet and sour, which is achieved by adding just a little drop of raw honey ( or maple syrup) to the dressing.
* For a vegan version, omit the goat cheese or substitute it with cubed tofu.
