Spicy sausages and potatoes

Ingredients

500 g spicy sausages ( chicken or pork ), cut crosswise into thirds
500 g small potatoes, each cut in half
3 small onions, cut into 4 wedges each
2 red and/ or yellow capsicums, cut lengthwise into 8 pieces
1 tablespoon olive oil
Salt and pepper


Method

1, Preheat oven to 230 * C ( 450 * F ).

2, In a 15 ½ ‘’ by 10 ½ ‘’ baking tin, combine sausages, onion, peppers, olive oil, ½ teaspoon salt and ½ teaspoon black pepper; toss to coat.



3, Roast 30-35 minutes or until potatoes are fork- tender and sausages are browned, stirring once halfway through roasting.
