Spanish Salad – One day as I was daydreaming I was inspired to create this salad. The ingredients are commonly found in Spain. The country is known for it’s oranges, almonds, and delicious cheese so this combination is only natural. (If you are trying to eat dairy-free the cheese is optional, but for anyone else I definitely recommend using the Manchego cheese.)

Tortilla de Patata - You will find this dish anywhere you go in Spain. It’s served as a small tapa with bread, or as a ración or larger portion.

Roasted Red Bell Peppers -Roasted peppers are always on the menu at my house. They are so yummy, and according to Dr. Oz they are also good for your wrinkles. That’s a good enough reason for me to indulge.
