This vegetarian casserole looks like spaghetti, even tastes like spaghetti, but it’s made of…squash! Spaghetti squash, that is. Spaghetti squash is an oblong, yellow mild-tasting squash that turns into squash-like spaghetti when cooked.
To roast spaghetti squash, halve it, clean it by removing the seeds and washing the inside. Place the squash halves, cut side down into the oven, preheated to 400 degrees F. Add 1 cup of cold water. Roast for about 30 minutes. Test for readiness with a fork: squash should be soft. Get the squash out of the oven and allow to cool for 15 minutes or so. Flip the squash to be cut side up and fluff the inside flash with a fork. The inside will look like spaghetti.
