Oh my goodness. Sooo jealous! Is anyone besides me NOT going to the Healthy Living Summit in Chicago? Holy nugget of bloggie goodness! I found about what it even was way too late, but it seems like every bloggie I read is at the HLS all weekend. How exciting! I can’t wait to read some stories about how much fun it is. And of course, I want to go next year!!
This morning I tweaked a recipe that Xtina sent to me and came up with this:
FLUFFIEST WHOLE WHEAT PANCAKES (serves 4)
Ingedients: 1 cup ricotta 1 cup sour cream 1/2 cup whole wheat pastry flour 1/2 cup oats (not quick-cook) ground up in a food processor 3 eggs 1 tsp vanilla extract 1 cup blueberries (Optional)
Directions: Combine it all and cook on medium. It’s hard to tell when they need to be flipped. The edges will dry out a bit and if you put a spatula under, it will not be gooey. That’s all I can tell you haha. They are so thick and fluffy and pretty good for you too.

Stanton doesn’t actually like pancakes. I make them rarely, but when I do, he usually doesn’t finish. Cue Addison. Addison is my lovely lab who LOVES blueberries. I thought about the doggy menu and what she can and can’t eat and decided to let her have Stan’s leftover pancake. Nom nom for puppy!! Haha, she kept licking it at first. She didn’t know what it was. Then she attacked like a great white shark on a surfer. She’s all blurry because she just chowed down! If she could get paid to chow down, she’d be a millionaire. Really.
I had a lot of time to kill tonight. I should have gone to yoga, but I’m afraid to do anything to my achilles tendon until after I cross the finish line on Saturday. Ick. So I got caught up on all of your lovely blogs. And I have a Lean Cuisine for the firs time in I don’t even know how long. And now I’m going to read Bee Season until I pass out. I give it about 2 hours. Ps- Did you know that Bee Season is a movie too? I just found that out. Going to have to look in to that when I finish the book.
