Soba with Chicken and MushroomsIngredients: Organic Soba (enough for 2 servings - mine came in bundles that were pre-measured for 2 servings)2 boneless chicken breasts (sliced into small cubes)1 cup of sliced white mushrooms1/3 cup of pine nuts1 cup of broccoli3 tbsp of sesame oil2 tsp of ground gingerSalt and Pepper to taste
Instructions: Cook Soba according to instructions on package - drain and rinse with cold water and set aside.
In medium frying pan brown chicken in sesame oil, then add in ginger, mushrooms, broccoli, and pine nuts. Brown the rest of the ingredients. Add Salt and Pepper to taste while browning the other ingredients.
Lastly add the contents of your frying pan to the soba and serve and enjoy!
