Soba with Chicken and Mushrooms

As I venture in new ways of eating clean I have decided to try out new foods that I have never tried before. This week's venture - drum roll please - Soba Noodles. Now I can hear you asking "Wait so-what? noodles?" That's totally what I thought as I researched things to try. There were all these Asian recipes out there for Soba Noodles but I had honestly never heard of them. Let's be honest my experience with Asian cooking is limited to say the least! I can make a mean stir fry and I order take out really really well but that is pretty much the extent of my Asian cooking.

Well it turns out Soba Noodles are noodles that are common in Asian cuisine and they are made from buckwheat. Soba is actually the Japanese word for Buckwheat. (My family had a dog when I was little named Buckwheat but I think that was a Little Rascal's Reference and not so much a food reference) Anyway... I decided to pick some Organic Soba up at the store and see what I could do with it. I wasn't really sure what to do with it - but I figured that Asian flavors must marry well with the noodles since they are used in Asian cooking and turns out my logic was correct!  So here's the recipe - enjoy!
Soba with Chicken and MushroomsIngredients: Organic Soba (enough for 2 servings - mine came in bundles that were pre-measured for 2 servings)2 boneless chicken breasts (sliced into small cubes)1 cup of sliced white mushrooms1/3 cup of pine nuts1 cup of broccoli3 tbsp of sesame oil2 tsp of ground gingerSalt and Pepper to taste
Instructions: Cook Soba according to instructions on package - drain and rinse with cold water and set aside.
In medium frying pan brown chicken in sesame oil, then add in ginger, mushrooms, broccoli, and pine nuts. Brown the rest of the ingredients. Add Salt and Pepper to taste while browning the other ingredients.
Lastly add the contents of your frying pan to the soba and serve and enjoy!
