The Snow is falling in such big beautiful flakes! I couldn't think of a better way to spend indoors, but to make cookies. I was going through some old magazines and found an issue of Self Dishes (spring, 2006) and this cookie recipe just popped out and said "bake me".....lol!!!. They are called "Anzacs" from Willow Stream The Spa at The Fairmont Scottsdale Princess resort, Arizona. They were super easy and really delicious. The wine bottle holder was painted by my mom. She does a really great job. Just wanted to show that off. It really towers over those cookies and milk though!
Makes 4 dozen
1 1/2 cups rolled oats
1 cup plus 1 T. whole-wheat flour
2/3 cup Sucanat Organic sugar
1 1/4 cups sweet shredded coconut
3/4 cup butter
3 T. maple syrup
1 tsp. baking soda
Heat oven to 300 degrees. Combine oats, flour, sugar and coconut in a bowl. Melt butter and syrup in a small saucepan. In another small pan, boil 3 T. water and stir in baking soda; add to syrup mixture. Mix wet with dry ingredients. Form small balls and place on a nonstick baking sheet about 2 inches apart. Bake 15 minutes or until golden brown.
