Snack of the Week *Cantaloupe*

Happy Friday everyone! I hope your week has been as fabulous as mine has been! Well it's time for the snack of the week again (time flies!). So about a week ago I posted some great photos of the produce we have gotten from the garden thus far and I alluded to the fact that we had about 12 cantaloupes about ready to be ripe - well guess what... THEY'RE Herrre! Check em out




In case you haven't gleaned it from my snack posts -  I LOVE fruit! If you could eat only fruit and not eat veggies... I totally would (and I suppose I could but then I might have some digestion issues... just sayin') Well regardless of digestion, Cantaloupe has done it - drum roll please.... Cantaloupe is this week's snack of the week (I really need to start making awards for these fab snacks!)

Anyway we have never tried to grow cantaloupes before - it was totally a whim and they turned out really well - According to my Dad, the master grower, you have to turn the cantaloupes as they grow in the garden to keep them from rotting, since they are a vine that grows above the ground - I would guess this is true of pumpkins and watermelons and other such vine-y things... but I'm no expert on growing things as my thumb is thoroughly BLACK!

Now granted I usually eat cantaloupe plain but I decided to be inventive and give you guys a recipe for a great salad that I thought up. I did some recipe research and I found that there are all sorts of recipes for savory cantaloupe salads... a taste I had never really thought of with the cantaloupe since it is so sweet. So I decided to combine a few and then put my own twist on them of course. So here you have it
Cantaloupe and Cucumber Salad
Ingredients: 
1 medium sized cantaloupe diced up
1 medium sized cucumber diced up 
1/3 cup of red wine vinegar
1/3 cup of crumbled feta cheese
sea salt and pepper to taste


Instructions: 
Dice up your cantaloupe and cucumber so that the pieces are roughly the same size. Then toss them in a medium sized bowl with red wine vinegar, feta cheese, and salt and pepper. 


A lovely and quick snack salad


Isn't that so easy and now you have a different take on a fruit salad that is sure to make your post-lunch snack super refreshing and savory!
