Smart Balance Recipe Contest

I was recently asked by Smart Balance to take part in their Battle of the Bloggers. Each blogger was asked to create a recipe using a smart balance product of their choice. From 7.10.13 until 8.6.13 I am asking for your help to vote for me to win the Battle of the Bloggers!! I could potentially win a year long ambassadorship with Smart Balance!

My recipe submission was perfect for summer :)

Freshened up Key Lime Pie

Description: Summer is my favorite time of the year. With summer comes lots of outdoor parties. I love eating good refreshing foods especially when desert time rolls around.
Prep time: 15 minutes
Cook time: 35 minutes
Ingredients 1 ½ cups graham cracker crumbs
½ cup granulated sugar
4 tablespoons Smart Balance butter melted
2 cans sweetened condensed milk
2 large eggs
1 cup lime juice
1 cup plain non fat plain greek yogurt
2 tablespoons powdered sugar
1 tablespoon lime zest

Directions:
1.) Preheat oven to 375 degrees f
2.) In a bowl, mix graham cracker crumbs, sugar, and butter with your hands. Press the mixture into a 8 inch pie pan and back for 20 minutes or until crust is brown.
3.) Remove from oven and allow crust to cool to room temperature.
4.) Lower the oven to 325 degrees F.
5.) In a bowl combine the condensed milk, eggs, lime juice, lime zest, eggs, yogurt and powdered sugar. Whisk together until blended.
6.) Pour mixture into pie crust and bake for 15 minutes.
7.) Chill pie in refrigerator for at least 2 hours and enjoy.
