Slicing and stacking

I bought gigantic eggplants from Rouse's during my first few trips there and I swear, I was having trouble using them all up. I think I get a little too excited every time I hit the produce section at the grocery store. I'm not even going to discuss what happens when I'm at a farmer's market. In an effort to use up some of the final remnants of my eggplant I decided to make some caprese-like stackers. I'll be honest, I don't actually know what constitutes caprese other than mozzarella and tomato. I've seen so many variations of this meal idea all over the place and I knew basically that it involved grilled vegetables all stacked together with cheese. I had some spinach-basil pesto left over in the fridge and just thought of smearing them over certain layers of my meal.

Some things to consider: I am awful at cutting even circles. Just awful. I hope this is a life skill that I'll hone in the near future but for now, you will have to deal with my uneven slicing. Also, I can never slice herbs as finely as I want to. Maybe it's my knife? Or just knife skills? Basically, I am awful at slicing, deal with it.
