Since cranberries were on sale I grabbed another bag and made some more cranberry relish. This time I modified the recipe a bit to make it more kid and wife friendly. There were complaints of bitterness from the previous recipe.
I completely omitted the orange zest and for spices used only 1/4 tsp cinnamon, 1/8 tsp nutmeg, and 1-2 tsp fresh ginger. I added just a pinch or two of salt to hide a hint of bitterness from the cranberries. I also added a couple tablespoons of whey. If you let this sit at room temperature long enough to ferment you might be able to call it chutney.
This seems to have an improved family acceptance factor.
