Shrimp Pasta with a Balsamic Reduction

For the Record I made this dish before I decided to go vegetarian --- That being said this was a fabulous - kitchen sink cooking experiment! I have seen Balsamic Reductions on the Food Network but I have never made one. It always seemed so fancy to me - but guess what folks... its not! Its super easy and very tasty!The flavors go so well together - the balsamic and the seafood - this makes for a tasty "gourmet" dinner for you and your family and it won't break the bank either! So here's the Recipe! ** Please note this dish calls for some major multitasking since you are cooking pasta and sauce all at one time**
Shrimp Pasta with a Balsamic Reduction Ingredients:  Pasta - your choice - I chose Spaghetti noodles because that is what I had 1 cup of broccoli florets 1 cup of raw shrimp (I found some great frozen shrimp at my grocery store on sale) 1/3 cup of Balsamic vinegar 2 tbsp of olive oil 1 tsp of oregano 3-4 leaves of fresh basil 1 tsp of ground garlic salt and pepper to taste
In a medium pasta pot - cook your pasta to al dente. Meanwhile in a smaller pot pour in balsamic vinegar and olive oil and heat on medium heat. Bring this mixture to a boil. Then add in oregano, garlic, salt and pepper.  (I eyeball my spices - about 1 tsp fits in the crevice of your palm)

Next lower the heat on your sauce and add in basil leaves - let sauce boil and reduce for about 10-15 minutes (while you are cooking pasta, shrimp and broccoli). After about 10 minutes remove the basil leaves and toss them in the trash (they are pretty useless now since you cooked all the flavor out of them).

If you use frozen shrimp thaw those out by rinsing them with cool water. Then place in strainer to drain. If you don't use frozen shrimp - still rinse them before adding them to the pasta to make sure all the nasty sea water and germs are off of those babies!

Next add in broccoli florets, and shrimp to boiling pasta. Cook for about 7-10 minutes - or until shrimp is pink/orange and broccoli is tender.

Lastly drain pasta mixture in a colander and then plate the pasta in a bowl or on a small salad plate. Pour some of the sauce down over the pasta and serve!
