Shrimp and Prawn on Mango, Avacado and Snow pea Salad with Spiced Oil

Ingredients
270 g ripe mangoes, very thinly sliced 270 g avocados, very thinly sliced 90 g radicchio ( or Romaine lettuce ) 90 g chicoree ( or Romaine lettuce ) 90 g frisee ( small leaf ) lettuce 80 g snow peas 330 g shrimp, precooked and shelled 160 g crab meat 60 g bean sprouts 400 ml spiced olive oil Lemon dressing as required
Method
Steam the prawns for few minutes till cooked. Place the thinly sliced avocado and mango on a plate. Arrange the shrimp and crab meat on a bed of fresh lettuce, radicchio and other ingredients. Pour the spiced olive oil and lemon dressing over the seafood.
To prepare dressing
Combine olive oil, a little honey, coriander leaves, lemon juice and roasted red chilly to taste. No salt or pepper to be added.
