Salsa

Preparation time -25 minutes
Makes - about 1 cup


Ingredients

100 g olives
1 large tomatoes
½ cup coriander leaves
1 jalapeno chilli or 3-4 green chillies ( as per taste )
1-2 cloves of garlic
3 tablespoon virgin oil
2 tablespoon fresh lime juice
Salt and pepper to taste

Method

1, Pit and chop up olives. Deseed and chop tomato. Deseed jalapeno chilli, if using. Finely chop coriander leaves and chilli. Peel and mince garlic cloves.

2, Combine olives, tomato , coriander leaves, chillies in a bowl. Add oil, lime juice , salt and pepper to taste. Serve with corn chips, toasted pita or even savoury sandwich.
