Salada de Feijão Verde com Atum - Green Beans Salad with Tuna

Here is yet another staple in the Portuguese home. A delicious recipe to enjoy during warm days and how healthy it is too. The main secrets here is to make sure to mince the onions really finely and use high quality extra version olive oil and red wine vinegar.
INGREDIENTS
24 oz of organic green beans
1 minced onion
1 tbsp of minced parsley
a few parsley leaves for decoration
1 can of tuna
2 hard boiled eggs
1/2 cup of black olives
2 tbsp of extra version olive oil
1 tbsp of red wine vinegar
salt & pepper to taste
DIRECTIONS
Bring water with a tad of salt to boil
Add the green beans and cook them for about 7 minutes
Mince onions and parsley
In a small bowl add the olive oil, vinegar, minced onions and parsley and salt & pepper to taste and mix it all well
Cut the hard boiled eggs in quarters and set them aside
Strain the beans and place them in a large bowl, add the vinaigrette and lightly toss
Add the tuna broken up into small pieces and lightly toss the salad again
