Salad with Buckwheat

Rich in B-vitamins, iron and protein,gluten-free  buckwheat is a great addition to a healthy family meal. This nutritious salad, made with warm buckwheat is what my kids and I eat for lunch about 75% of the time. This salad is such a staple at my house, I had thought it would be “boring” to include its recipe here. But I got over it, so here it is.

I like to “cook” my buckwheat by rinsing it a few times first and then adding 1/2 a cup of buckwheat groats to 1 cup boiling water in a small pot. I then cover the pot and leave it overnight. You can definitely add this cold buckwheat to your salad, but I like to saute it first with a bit of coconut oil or butter and some salt.
