Rum and Raisin Truffles

Soft and creamy dark chocolate flavoured with rum and raisins

Makes : About 36 truffles
Time required : 30 minutes

You will need

400 g dark cooking chocolate
400 g milk chocolate
80 ml honey
150 g white butter
200 ml fresh cream
150 g raisins
30 ml rum
Cocoa powder for dusting

Method

Melt the dark cooking chocolate and milk chocolate with honey and butter over a double boiler. Heat cream in a saucepan till it reaches boiling point and pour it over the chocolate. Whisk till the mixture is well combined and has a velvety texture. Fold in raisins and rum and allow the mixture to set. Shape into small balls ( about 10 g each ). Roll them in the sieved cocoa powder before serving.
