Royal Joust Enchiladas

There are some food events that I look forward to every month, even if I don’t participate in them every month. One of them is The Royal Foodie Joust started by my friend Jenn at the Left-Over Queen Forum. Every month the winner of the previous month chooses 3 ingredients that participants have to use to create a dish. It is amazing all the entries people come up with.

Last monht’s winners were Peter and his Wife Christey of FotoCuisine, a beautiful blog btw. They didn’t choose three ingredients. Instead they chose 3 colors that in my opinion are the greatest colors in food: red, green and white. Those are the flag colors of the two countries which cuisines are my favorite, Mexico and Italy. They are colors of fresh ingredients and delicious flavors. I thought for a long time what I wanted to create, but finally I decided to go back to the basics.

Royal Joust Enchiladas

I made pork enchiladas verdes and rojas (green, made with tomatillos and jalapenos and red, made with tomatoes and chile de arbol) and served them in the same plate with sour cream. For the first batch I used crepes and for the second corn tortillas. Those ingredients are staples in my kitchen. If you have been following this blog for a while you already know that and if not, just take a look at the food I have posted during the past two years. Enchiladas will always be a winner dish in my book.

I want to apologize for the pictures. I have a new wireless flash that for some reason didn’t want to sync with my camera and other flash. It took me several minutes and shots to get it to work and in the mean time my enchiladas went dry :( But at the end the lighting kind of worked, right?
