Roasted Figs with Balsamic Vinegar and Goat Cheese

Scrolling back in time to last weekend's farmers' market trip , just what did I do with those glorious fresh figs?

Why, the simplest, most classic, most heavenly appetizer imaginable...

Roasted Figs with Balsamic Vinegar and Goat Cheese

~ Preheat the oven to 350 degrees.
~ Slice fresh figs, from the stem-end down, in a cross pattern, being careful not to cut all the way through the figs so that they open up in a flower shape but stay attached. Place the figs on a baking sheet.
~ Pour approximately 1 tsp balsamic vinegar into the center of each fig "flower."
~ Bake the figs for 10 minutes - until they're nicely warm, but still retaining their shape.
~ Place a dollop of goat cheese in the center of each fig... and serve warm or cold!
