Fruit and cheese are a natural pairing. Here I use fruity port wine to flavor this red onion marmalade. The teleggio cheese pairs nicely with these flavors, but if you can’t find it in your market, mozzarella would be a fine substitute. As always, I like to use sprouted grain breads for any sandwich.
3 tablespoons vegetable oil
1.5 medium red onions, diced
Salt and pepper, to taste
3 cups port wine
4 teaspoons honey
¼ inch slices of teleggio cheese
8 slices of sprouted grain bread, toasted
Heat oil over medium heat. Cook onions for 5 minutes or until translucent. Salt and pepper to taste.
Add wine off heat. Bring to a boil and then simmer uncovered for about 15 minutes or until mixture starts to thicken. Now make sure to stir frequently so natural sugars in the wine do not burn. Add honey and keep stirring until you reach a sticky, almost jelly-like consistency. Take off heat.
Place a slice of teleggio cheese on bread. Melt in toaster oven or microwave. Spread some red onion marmalade over other slice, press together, and enjoy!
