200 g mix of vegetables, such as 1 large carrot, 1 large potato and 1 large sweet potato, peeled 1 beetroot , peeled 3 tablespoon olive oil 1 teaspoon salt
Heat oven to 220 * C. Cut all the vegetables into thin matchsticks and tip into a non –stick roasting tin. Drizzle with olive oil and sprinkle with salt. Roast for 20 minutes until they are crisp and golden brown. Serve with Veg Nugget s/ Chicken nugget s / Burger….
