Recipe of Nutritious Banana- Honey Cake

Fruit cake with a sprinkling of nuts & honey


17 g ripe bananas

100g all –purpose flour/ self rising flour

A pinch of soda bicarb

¼ teaspoon salt ( 1 g )

40 g butter

90 g brown sugar

1 egg, lightly beaten

40 g walnut, chopped coarsely

25 g cashew nut , powdered

1 tablespoon honey


Peel and mash the bananas. Sieve the flour with soda bicarb and salt. Cream the butter with sugar. Gradually add beaten egg, bananas and finally add nuts. Fold in the flour mixture. Add the cashew nut powder and honey. Mix with a wooden spoon. Pour into a buttered loaf tin or cake mould, bake at 180 * C for about 35 minutes or until done and well risen and golden brown. Remove from the mould and cool.
