Spring rolls are fried pastries that can be found in several Asian countries, most notably China, Vietnam, the Philippines, and Indonesia.
To make spring rolls first make the stuffing. Heat 1 teaspoon oil in a pan and add 1 chopped onion and 8-10 finely mushrooms.Stir fry and add ½ cup boneless chicken chopped into small pieces. Add ½ cup shredded cabbage. If you want to make vegetable spring rolls you may replace the chicken with ½ cup of thin long strips of carrot / French beans / capsicum shredded into strips. Add 1 tablespoon soy sauce and ½ teaspoon of salt . Sprinkle 1 teaspoon cornflour and stir fry till the mixture is crisp. Remove from the fire, Set aside.
Now sieve 1 cup all –purpose flour / maida and ¼ teaspoon salt. Add an egg and water to make a smooth batter of flowing constituency. Heat big frying pan and grease with oil. Make pan cakes.
Put the filling in the centre and roll the pan cake to take the shape of spring roll. Dissolve 2 tablespoon cornflour in 1 ½ teaspoon salt and water to make make very thin batter. Dip the spring roll in this and deep fry till golden brown and crisp. Drain out on paper. Serve hot with Chinese sauce.
