Happy New Year everyone! A new year begins and like most, I’m watching the eating after a great Christmas and New Years. The first recipe of the year doesn’t disappoint those looking for some healthy alternatives by creating a light and healthy alternative to the great burger. The great thing about this is it uses no flour in the burgers, only flour to dust them. These italian-themed burgers use cannellini beans, with mushrooms and basil, accompany it with oven-roasted rosemary potatoes and you have a great Italian treat!
Makes:
4 burger rissoles
Ingredients:
400 grams can butter beans (cannellini beans)
fresh basil - 2 tbs torn
salt to taste
pepper to taste
6 mushrooms, blended down (minced)
1 garlic clove
1 tsp onion powder
2 tbs flour
Instructions:
Drain the butter beans and pour into a big jug.
Using a potato masher, mash the beans down to what looks like mashed potatoes.
Mix in the herbs and spices.
In a blender, mince down the mushrooms and garlic together.
Mix into the bean mixture thoroughly.
Once mixed, split into four and roll into balls before flattening into hamburgers.
Place the flour on a plate and spread it out.
Place the hamburgers into the flour and wipe the excess off.
On a non-stick pan, dry fry the burger each side for five minutes before serving with your favourite burger toppings in a bun.
