This recipe comes just at the time for most in Australia I bet, and for me, it is just what I need at the moment. I’ve just started back at work and I have caught the dreaded cold off my workmates! What luck do I have? So this Vegetarian version of the Chicken Noodle Soup is the best comfort food to have.
Not really want to eat anything, it goes down quite easily and is quite tasty. For those vegetarians, it’s a great alternative to the Chicken Noodle Soup, using mock meat and chicken style broth for a chicken flavour.

2 tbs soy sauce
1 tsp ginger mince
2 tsp garlic mince
2 fresh chillies chopped finely
4 tbs sesame oil
1 tsp white pepper
1 litre chicken style vegetable stock
200 grams mock chicken meat
400 grams dry rice noodles
100 grams shitake mushrooms sliced roughly
handful coriander, chopped finely
4-5 cups water
In a pot add the soy sauce, garlic, ginger, chilli, pepper, mushrooms and stock. Allow to get to a boil.
Pour the water in and add the chicken. Boil for another 10 minutes.
Mix in the noodles and lower the heat and allow to soften.
When they have softened, add your coriander and mix through before serving.
