Work on our apartment continued this weekend. We bought an organizer for our hall closet, which was never well utilized because it had no shelving. We now have so much space! We’ll actually be able to buy bulk items, and my giant box of 101 cookie cutters now has a home.
Every time I pass the closet, I find myself opening the doors just so I can marvel at the sight of it all.
We are now on the hunt for an organizer for our coat closet. And I just bought the coolest fabric-covered magnet board from Etsy to hang over my desk so I can pin photos and important papers. I could spend days at a time perusing Etsy.
Unlike last weekend, I was able to head to the store so I had more variety on hand for this week’s Real Food Challenge.
What I’ve been referring to as a “bowl of happiness”: plain greek yogurt with St. Dalfour blueberry spread, sliced bananas, all-natural granola, and trail mix
Coffee with half-and-half and 1/2 teaspoon sugar
Roasted vegetables, one slice swiss cheese, pesto, and white balsamic vinegar on bakery-made tomato focaccia
Sliced apple with Justin’s Maple Almond Butter
Salad with romaine lettuce, Great Northern beans, carrots, cucumber, sliced mushrooms, and goat cheese with a homemade dressing of extra-virgin olive oil, apple cider vinegar, honey, salt, pepper, and an Italian spice mix
Bowl of poblano corn soup
Glass of Pinot Grigio
Out to brunch: oat bran Belgian waffle with strawberries, one egg over-hard, and breakfast potatoes
