Real Food Challenge – Week 7

Posted Feb 17 2013 7:42pm

Hi everyone, here’s Real Food Challenge , Week 7.

RFC W7 1

I had to work a good part of the weekend so I decided to get a number of household chores accomplished as well. I cleaned and organized our refrigerator, pantry, and kitchen drawers, cleaned all of our wine glasses and organized our bar, organized my bedroom closet, dresser, and nightstand, labeled all of my shoe boxes, and recycled old magazines. I also hit up Amazon for home storage baskets and labels to help keep everything in its proper place going forward.

I often think I should start a business that helps others organize because I truly enjoy getting a home in order.

Since I was busy this weekend, I didn’t get a chance to cook or head out to the store. So, I relied on leftovers and the below food staples that I tend to always have in the house for this week’s Real Food Challenge:

Frozen Vegetables
Fruit with long refrigerator lives (apples, lemons, limes)
Oatmeal
Granola
Eggs
Yogurt
Nuts and Nut Butters
Honey and Agave

Saturday

Oatmeal with honey, blueberries, and all-natural granola

Coffee with a splash of milk and 1/2 teaspoon sugar

“Sour Apple” Smoothie: one apple, handful of frozen chopped spinach, juice of 1/2 lemon, 1/8 teaspoon ground ginger, honey, 8 ounces water, and crushed ice

Handful of almonds and cashews

Leftovers from Valentine’s Day : pork medallion, coconut rice, and roasted vegetables

1 piece of Russell Stover chocolate

Peppermint tea

Sunday

Oatmeal with agave, unsweetened coconut, and Justin’s Maple Almond Butter

Coffee with a splash of milk and 1/2 teaspoon sugar

Two leftover tacos with grilled chicken and fresh salsa

Handful of almonds and cashews

1 piece of Russell Stover chocolate

Cranberry-lime seltzer

I wasn’t in the mood for “dinner food” so I had two scrambled eggs, plain greek yogurt with honey, and apple slices seared in coconut oil and sprinkled with cinnamon
