Real Food Challenge – Week 2

Hi all, here’s Real Food Challenge , Week 2:

Saturday

Yogurt “parfait:” 2% plain greek yogurt topped with mixed berries, pecans, almonds, unsweetened coconut, and all-natural granola

Coffee with a splash of milk and 1/2 teaspoon sugar

Whole grain toast* with ricotta, pistachio nuts, and dates, inspired by a meal I had at Founding Farmers while in Washington, DC this week for work

Sliced apple

* I used Bread Alone’s organic whole grain bread. The ingredients are whole wheat flour, water, whole wheat sourdough, honey, sesame seeds, sunflower seeds, flax seeds, sea salt, and yeast. If you live in the New York area, you can find Bread Alone at Fairway.

Out to Dinner: Tandoori Chicken, Saag Paneer, and Rice

Sunday

Same as Saturday

Banana

1 egg scrambled

Slice of Bread Alone whole wheat with St. Dalfour plum spread (which is sweetened with grape juice)

Homemade Melomakarona cookie from my mother-in-law’s good friend – delicious!

I drank water all weekend with the exception of a cup of coffee each morning. I did 45 minutes of yoga on Saturday and planned to run on Sunday to enjoy the mild weather. However, I’m pretty wiped out from a long week so I spent some time on my couch instead. Tomorrow, I’ll be up early for morning flow yoga. I hope you had a great weekend!
