Hi everyone! I hope you all had a great weekend! We ran errands and went swimming on Saturday, and yesterday the girls and I just hung out at home together because my husband had an overtime shift. Guess who got a major hair-cut…..?
With it averaging in the 100s here, we figured he ought to get buzzed.
Before we owned Gus, I actually aspired to be a dog groomer! I thought it would be such a cool job because you get to work with animals all day. Well, since seeing what a pain in the arse my husband has shaving Gus, those dreams are long gone! I don’t know how they subdue those animals, but it must take a decently dosed Valium to get them to hold still.
On to the delicious dessert that is the star of today!
These bad boys are rich, chocolatey, and healthy to boot! I loooooooove raw desserts and these take the cake!…..er, brownie….
RAW FUDGE BROWNIES
1/2 c. pecans
1/2 c. almond meal (I use the dehydrated meal from making almond milk )
1 c. dates, room temperature
2 T. cocoa powder
2 T. carob powder (or 2 T. more cocoa powder)
1/8 t. salt
2 T. coconut oil
1 T. maple syrup
1 T. cocoa
5 drops liquid stevia (or 1 T. more maple syrup)
1/4 t. vanilla
Process the pecans until they resemble a meal (don’t process too long or you will have pecan butter…which wouldn’t be bad…but I digress). Add almond meal, cocoa, and carob (if using) and pulse a few times to mix. Add dates and process until combined. Press the mix into an 8 x 8 dish.
For the icing, process all ingredients until smooth. Pour atop the brownie layer and spread out.
Freeze the dish for at least 15 minutes. Cut and enjoy!
Some of you may wish to double the icing…since that’s your favorite part….and you eat half of it before you get it on the brownie….just sayin’.
