I rarely post dishes with hidden vegetables, but sometimes tricking the kids is so much fun! A healthier and gluten-free version of the classic mac and cheese is not only lacking the white pasta, it also includes and invisible vegetable!
I think that any time there is cheese in the dish, there can be cauliflower. Cauliflower is white, virtually tasteless and the kids won’t notice if you don’t put too much of it. What they are also not likely to notice in this unusual mac and cheese is the lack of pasta. Quinoa, a protein-rich Peruvian seed provides enough of pasta-like taste and texture for the kids not to care. My kids kept asking for seconds and thirds.
* For a vegan version, use vegan cheese and 2 tablespoons of chia seed in place of the eggs.
