Pumpkin Pie

I am amazed how many people use canned pumpkin for their pumpkin pie. I cannot imagine using something out of a can when you can buy a beautiful pumpkin or even butternut squash and turn it into a gorgeous pie.
Here is my recipe for wheat free, dairy free, sugar free pumpkin pie.
Make a crust out of wheat free flour and dairy free butter.
Peel the pumpkin and steam 1 pound until it is soft. Mush it all together with a fork.
Heat up 275 ml of dairy free cream with xylitol, nutmeg, cloves cinnamon and ginger to taste (you want the spices to be quite strong!)
Mix this mixture with two whisked eggs and on egg yolk. Whisk it all together and then add the pumpkin mash. Mash it all together and pour over the crust.
Bake for 30 minutes or until it is beginning to go a bit hard.
DELICIOUS!! Even my family who hate pumpkin pie loved this!
