Pumpkin Muffins

I am fascinated by the things people consider A Good Idea. Just yesterday, I drove past a lady walking her dog while clad only in a scanty crop-top barely covering her, um, chest, along with a pair of leggings I am fairly certain were only meant to be worn underneath a skirt. Preferably a long one.

Just last week, someone else apparently decided it would be fair and reasonable to steal the last remaining wheelchair from the medical clinic I manage. I now have to instruct our staff to inform patients that we are no longer able to provide wheelchairs because people steal them, along with our bottles of hand sanitizer, blood pressure cuffs, and the mouse attached to nearly every doctor's computer. All medical equipment in our facility is now bolted to a wall or floor.

I think I need to bake some muffins to deal with it all... Pumpkin Muffins, to be exact.



Pumpkin Muffins

1 1/2 cup pumpkin puree
1/2 cup fat free Greek Yogurt
5 egg whites
1 cup raw turbinado sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp pumpkin pie spice
Dash of salt
1 2/3 cup whole wheat flour

~ Preheat the oven to 350 degrees F, and coat muffin tins with cooking spray or paper liners.
~ Whisk together the pumpkin puree, yogurt, egg whites, and sugar.
~ Whisk in the baking soda, cinnamon, nutmeg, pumpkin pie spice, and salt.
~ Fold in the flour.
~ Scoop the batter into the muffin tins, and bake for 20 minutes - until a toothpick comes out clean. Serve warm or cooled!
