Protein Powder Banana Muffins 1 1/2 cups whole wheat flour (or white whole wheat flour) 1/2 cup protein powder (I use Nutiva organic hemp protein and fiber powder ) 1 cup raw turbinado sugar 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 2 tsp cinnamon 1 cup low-fat buttermilk 6 egg whites, beaten 1/2 cup skim milk 1 cup mashed ripe banana 1 tsp vanilla 1 cup coarsely chopped dark chocolate (at least 60% cacao - I used the Endangered Species 88% cacao chocolate ) ~ Preheat your oven to 350 degrees F. Line muffin cups with paper liners, and coat them lightly with cooking spray. ~ In a large bowl, whisk together the dry ingredients (flour through cinnamon). ~ In another bowl, whisk together the wet ingredients (starter buttermilk through vanilla). ~ Make a well in the center of the dry ingredients, and pour in the wet ingredients. Stir until just combined. ~ Fold in the chopped dark chocolate. ~ Fill your muffin tins until they are nearly full. Bake for approx 20 minutes - until the tops of the muffins are just set, and a toothpick inserted gently in the center comes out clean. Allow to cool on wire racks, and store in the fridge in a closed container... and make sure to enjoy one or two warm right away! :-) |

Last Saturday, I joined several of my co-workers for the American Heart Association 5K here in Dayton. To all my amazing runner friends a 5K might not seem significant, but after having been told by my Neurologist and my Physical Therapist that it would never be safe for me to run again, or even walk long distances, a simple 5K seems like an enormous gift, a true cause for joy and thankfulness.
So, on Saturday morning, I braved the rain with a glad heart... and to celebrate, I baked a festive batch of protein powder muffins!
