I didn’t think I was going to make it tonight - we lost power for 2 hours!! No idea why!? It was total blackout.

Luckily we’d already had dinner!
My Foodserviceexam went OK. It was really hard - much harder than the mid-term. Lots of totally random questions that I would never have even thought to study and am not sure where they came from (textbook? websites?). “Anything is fair game” in that class, so you better just use good sense to try to figure things out. I think I did OK though.
Once home around 5:30 I had a few kashi crackers and made a mug of hot chocolate (milk + Nesquik plus some marshmallows I knew were hidden in the pantry somewhere!)

I asked the husband if he would make dinner so I could study more <3 I told him to do something with our egg abundance and he ended up doing egg salad salads!

The egg salad served 2:
- 4 eggs, hard boiled, cooled + chopped (for hard boiled eggs, we put them in cold water, bring JUST to a boil, remove from heat, cover and sit for 13 minutes, ice bath, peel)
- 1 carrot, minced
- 1/3 a bell pepper, minced
- 1 heaping tbsp olive oil mayo
- Huge squirt Guilden’s Zesty mustard
- Dill, salt + pepper, paprika, ??
- Plus GH toast with butter -

I’ve worked through 3/4 Organic tests and still feel SO overwhelmed. Argh! 2 more days!!
I’ve got my Nutrition in the Lifespan exam in the AM. I’m planning to do something light tomorrow - perhaps yoga - when I return from Winthrop. Not going to go to the gym. Organic needs me!
Marx Foods let me know about a contest they are holding for party recipes - and the winner gets a $400 gift card to buy some fancy ingredients!! I’ll be entering once exams are over
