Potato Chips

Well vacation time had to wait....business still called! So to celebrate having to still stay at home I decided to make hubby some homemade potato chips. Now, mind you I am not complaining about having to stay home and make money that is a very good thing and we will just take a nicer vacation later.



These chips were so easy to make and just in the microwave to boot! I did add alittle to much salt and pepper on them this time. Always learning from my mistakes...that's the name of the game...lol!!



Potato Chips (Recipe was from Eating Well or Vegetarian Times magazine)
Use as many Yukon Gold potatoes as you want (I used only one)
Pam cooking spray
salt and pepper
I used a microwave safe plate and sprayed it with Pam. Then used my mandoline to make very thin 1/8" slices. Place the slices single layered on the plate and sprinkled with salt and pepper.
Placed in the microwave uncovered for 3 mins. on high and then take out and turnover. Place back in microwave for another 3-4 mins. till some browning shows.
A bottle of Reed's Ginger Ale (optional)
Don't eat too many now....lol!!!
