Pineapple fried rice ( Pineapple flavored rice with vegetables )

Serves-2
Time required -10 minutes

Ingredients

1 pineapple
10 g carrots, finely chopped
10 g cabbage, cut into thin strips
10 g tender green peas
200 g basmati rice
Salt to taste
5ml oil
5 g spring onion, chopped fine

Method

Cut off the top of the pineapple o form two boat shaped halves. Scoop out the flesh to make hollow shells. Chop the scooped out fruit and set aside.

Put a little oil into a wok, sauté the vegetables for a few minutes. Add the rice and chopped pineapple. Add salt to taste and toss well, till all the ingredients are heated and the rice is cooked through.

Remove from the heat, fill the rice into one pineapple shell and partially cover with the other half shell. Serve hot.
