Pineapple Chicken Stir-Fry!!…

Hi there!  Happy Tuesday to you!  I hope your week is off to a good start.  My week so far even though it’s only Tuesday, has been quite stressful.  It was really awful at work yesterday because of the temperature in my building.  It was sweltering in the office.  I was unfortunately wearing a sweater and had no escape.  I sat with my sleeves rolled up and a fan blowing on me.  I finally couldn’t take it anymore and contacted facilities.  They said they were going to fix it but it never got fixed.  The day continued to be uncomfortable.  Today, I was smart.  I wore layers so depending on the temperature, I can take off clothing or put more on.  So far right now, it’s actually quite chilly in here.  I’d much rather be cold than hot.  At least if you are cold, you can put on more layers.  If you are hot, you are pretty much stuck.  Which would you rather be?  Cold or hot?

Yesterday after work,  I picked up Melissa and we ventured to the Chinese restaurant so I could show them my food and explain how dissatisfied I was.  They were so incredibly rude there and the woman was talking about us behind our backs.  She was making excuses and didn’t even apologize.  She gave me my money back and needless to say, I will not be dining there or taking food out from there any time soon.  Not after that whole fiasco!  I’d rather take my business else where.  You work so incredibly hard for your money and the last thing you want to do is waste it on horrible food and terrible service.  I am done with that place.  Since I got money back,  I decided to grab dinner from Boston Market .  I haven’t had their food in such a long time and I needed comfort after that whole ordeal.

Once, Melissa, Mike and I were done dinner, we finished watching the Beyonce special.  I have to say that it was interesting to see her so raw like that and talking so deeply about her life.  I have a lot of respect for her and I really do like her as a person.  We watched a few more shows and then watched the Bachelor.  I haven’t watched it live in quite a while.  I usually watch it on-demand or on the dvr.  It was nice watching it live.  I will be watching the finale live in two weeks even though I read my spoiler site and know who he picks.  It was nice spending time with Melissa and Mike last night.  I really needed that after a crummy day.

Shifting gears a little bit, I had mentioned last week that I made a really great dinner one night and I wanted to feature the recipe.  I completely forgot about doing it yesterday so I am going to feature the recipe today.  This is a good one.

Pineapple Chicken Stir-Fry 



1lb. or less of boneless skinless chicken breast

1/4 cup of soy sauce

2 tablespoons of sugar

1 tablespoon of apple cider vinegar

1 tablespoon ketchup

1 tablespoon of minced garlic

1 teaspoon of cornstarch

1 cup of cooked white rice or brown, whichever you prefer

1 can of pineapple chunks in its juice

Assortment of vegetables that you like


Cut up the raw chicken into bite sized pieces and set aside.  In a small bowl, mix together the soy sauce, sugar, apple cider vinegar, ketchup, garlic, and cornstarch.  Preheat a wok or skillet with cooking spray and toss in the chicken once it’s hot.  If you are using a wok, it heats up really quickly.  Cook the chicken until it’s no longer pink.  Then add, your assortment of vegetables (I used fresh mushrooms, frozen green beans, frozen squash, and frozen lima beans).  After the vegetables are added toss everything in the sauce that you made.  Then add the pineapple with the juice.  Let everything cook until the vegetables are soft and as tender as you like.  Once the vegetables are cooked, add the white rice and toss everything together.  Enjoy!

I really loved this stir-fry!  I love the addition of pineapple.  I think it adds something special to the meal.  I tossed in the rice to the wok because Mike doesn’t like plain white rice.  If you prefer, you can serve the stir-fry over the white rice, you don’t need to mix it into the meal.  It reminded me of a Birds Eye Voila meal but much healthier because I cooked everything myself.  I really enjoyed it.  Although, it was a bit too many vegetables for my stomach to handle.  I learned my lesson.  Next time, I will stick to just one vegetable but use as much or as little as you’d like.  I really like stir fry.  Do you like stir-fry?  What is your favorite kind to make?

I remember in the cafeteria in college, they had a stir-fry station.  They would have a bunch of ingredients and you would pick out what you wanted and a chef would make it right in front of you!  It was definitely a nice perk of the cafeteria.  Mike and I would definitely take advantage of that either for lunch or dinner. I think I had it usually a couple of times a week.  It was great because you could control what was going into your food.  I liked that.
