Pesto Roasted Potatoes

Are you ready for the easiest side dish ever?  This simple roasted potato dish is perfect for entertaining friends, neighbors or even strangers.  With only two ingredients, it’s quick to throw together but full of flavor and color.


Pesto Roasted Red Skin Potatoes

  • 8-10 red skin potatoes
  • 2-3 T. favorite pesto (Costco makes a great fresh pesto)
  • parmesan for serving
  1. Wash and dry potatoes.
  2. Cut potatoes into 1in. pieces.
  3. Preheat oven to 425.
  4. Place pesto in a bowl with cut potatoes and mix to coat.  Feel free to add more if needed.
  5. On a piece of parchment paper, place 1 layer of potatoes.
  6. Bake at 425 for 25-35 minutes depending on the size of your pieces.
  7. Serve hot!


We are in full countdown mode.  Only 3 more days after today until vacation!  I am so ready for a break from snow, freezing temps,  and being on a busy schedule.  It will be so great to see the sunshine!
