Peppermint Bark

Sorry I’ve been MIA lately. With the busy holidays and baby stuff – I’ve been neglectful of my little blog.

I am almost 5 month pregnant and we found out on Wednesday that we are having a little baby boy!

We are over the moon happy and can’t wait until May to meet him!

So onto the food…..

I’m not a mint fan at all but I came across this recipe and it looked so easy to make and pretty too! Everyone loved it!

Peppermint Bark
Adapted from Splattered Apron

8 ounces semi-sweet chocolate
12 ounces white chocolate
1/4 teaspoon peppermint extract
7-8 peppermint candy canes


Directions:

1. In a metal bowl set over a saucepan with simmering water, melt the semi-sweet chocolate over medium-low heat until smooth. Be sure to keep the chocolate moving so it doesn’t burn. This should take about 3-4 minutes.
2. Remove from the heat and stir in the peppermint extract.  Pour the chocolate onto a baking sheet lined with parchment paper or a silicone mat.  Spread the chocolate evenly in a thin layer.


3. Place in the freezer for an hour to harden.  When you’re ready for the next layer, grind up 3-4 of the candy canes to a fine powder.  Crush the remaining candy canes coarsely and set aside.
4. Melt the white chocolate in a double boiler {the same way the semi-sweet chocolate was prepared}.  White chocolate does not melt as well as semi-sweet, so use a low heat and add a little bit of vegetable oil if necessary to keep it smooth.  Once the white chocolate has melted, remove from the heat and stir in the candy cane powder.
5. Next, spread the white chocolate in an even layer on the semi-sweet chocolate. Quickly sprinkle with the coarsely crushed candy canes. You’ll want to make sure to do this before the white chocolate cools.


6. Then place it in the freezer for at least an hour.  Before serving, remove from the freezer and break the bark into uneven pieces. Serves 12.

Nutrition Notes: Definitely a splurge but it you like mint, this is fantastic!

: Like I said, I am not a mint person but everyone who tried this at our holiday parties absolutely loved it! It’s so easy to make and really pretty to bring as a hostess gift or dessert to a party!
