In my attempts to make oatmeal taste better, I discovered that my favorite banana and peanut butter combo works exceptionally well in a bowl of oats, just like it does in most other dishes! Adding more nutrients, healthy fats and protein to your breakfast, peanut butter and mashed banana would make oatmeal tastier to kids, too.
*To speed things up, cook the oats and the bananas the night before and just warm them up before breakfast.
Peanut Butter Banana Oatmeal
1 cup rolled oats
2 cups almond milk
2 ripe bananas
1-2 tsp. peanut butter
optional :1 tsp. maple syrup or stevia
Put the oats and the milk in a pot. Bring to boil, lower the flame and simmer until all the milk is absorbed ( about 7 minutes.) Divide the oatmeal between two bowls.
Put mashed bananas in a small pot. Put the pot on a medium-high flame and cook the bananas until they begin to caramelize and change color to slightly darker brown. Take the pot off the flame and divide the banana mixture between the two bowls.
Top with peanut butter and sweetener, if using and serve.
