Paula Deen Meatloaf Recipe

This Paula Deen Meatloaf Recipe is just one example of why I admire her. She is one of the few Food Network Stars who makes quick easy dinner recipes that real people with busy lives can make. I love her casual approach to simple easy home cooking.

(I love some of the other stars, but their recipes are reserved for weekends and special occasions, not most nights when easy dinner ideas are required.)

Paula Deen Meatloaf

There are lots of different Paula Deen meatloaf recipes out there. The first is the meatloaf recipe I make most often these days. It comes from her original The Lady & Sons Savannah Country Cookbook . I love that it uses oats instead of bread crumbs and has a sweet ketchup based topping.

The next time I make it, I’m going to replace the egg with a mixture of 1 tablespoon ground flaxseed and 3 tablespoons water, so it will meet Mac’s current dietary requirements.

Paula Deen’s Meatloaf Recipe

There is a variation of this recipe in Paula Deen’s The Deen Family Cookbook , called Aunt Peggy’s Old-Fashioned Meat Loaf. It is exactly the same except it calls for one can (6 ounces) tomato paste, instead of the cup of diced tomatoes. Experiment to find out which one you like best.

Prep Time: 15 minutes
Bake Time: 1 hour
Yield: 4 servings

Ingredients

1 pound lean ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 large egg
1 cup diced canned tomatoes with their juice
1/2 cup quick cooking oats

Topping Ingredients

1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon yellow mustard

Directions

1. Place a rack in the center of the oven and preheat the oven to 375 F.

2. In a large bowl mix together all meatloaf ingredients well. Place the mixture into a 9×13-inch glass or ceramic baking dish and shape into a loaf.

3. Mix together the topping ingredients and spread over the loaf.

4. Bake until done, about 1 hour. Remove from the oven and let rest for 10 minutes before slicing.

This is another Paula Deen Meatloaf recipe that calls for sour cream and Cheddar cheese, but no eggs, that looks like it would be delicious. I haven’t tried it yet but am thinking about making it soon. If I replace the crushed Ritz crackers with oats, It will meet Mac’s current dietary requirements of being wheat, corn and egg free.

Prep Time: 10 minutes
Cook Time: 60 minutes
Yield: 6 to 8 servings

Ingredients

8 to 10 slices white bread, for lining baking pan
2 pounds lean ground beef
1-1/2 teaspoons salt
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 cup chopped onion
1 bell pepper, chopped
1 cup grated Cheddar cheese
1/4 cup Worcesershire sauce
1 cup sour cream
1 cup crushed Ritz crackers
1 teaspoon seasoned salt

Directions

1. Preheat oven to 325 F. Line a 10x15x1-inch jelly roll pan with the white bread slices and set aside.

2. In a large bowl mix together all the remaining meat loaf ingredients (beef through seasoned salt) until well combined. Shape into a loaf and place the loaf on the  slices of bread.

3. Bake the loaf until done, about 1 hour. (The bread absorbs the grease and should be discarded after the loaf is removed from the oven.)
